Spicy Summer Coleslaw

Here’s a simple recipe that is too good not to try. No heat involved here….and that’s all I’ve cared about in picking dinner recipes lately.

90* city heat + no air conditioner = not even daring to look at the stove.

1 cup cabbage, grated
1 cup cucumber, grated
1 green bell pepper, grated
1 handful parsley, chopped
1/2 large tomato, diced
1 green onions, chopped
1/4 c. & 1 tbsp. low fat mayo
1 tbsp. apple cider vinegar
1 tsp. shiracha (yes, I went there)
Salt & pepper to taste

1. Combine all ingredients in a medium mixing bowl.
2. Chill in refrigerator for at least 30 minutes.

Trust me on this one that this dish tastes WAY better than it looks. I took about 90 photos of the final dish and this is the best take.

I don’t think coleslaw is going to win a beauty contest anytime soon. Taste test, yes. Beauty, NO.
