Summery Steak Dinner

A couple of weeks ago, Lindi’s doctor told him he might be anemic.  Of course, we turned to food to get a good dose of iron in his system (any excuse for a steak dinner, right?!). This three part iron-rich meal was delicious and took all of 30 minutes to make.

1. Summer Smokey Bean Salad:
1/2 onion, chopped
1 small tomato, chopped
1 can kidney beans, rinsed
1 small can green chilies
1 tsp smoked paprika
salt and pepper to taste

1. Combine all ingredients.
2. Chill for at least half an hour before serving.

Sauteed Spinach:
1 tbsp evoo
1/2 onion, sliced
3 garlic bulbs, diced
3 to 4 cups spinach, washed
1/4 c. water
sat & pepper to taste

1. Saute onions in olive oil in a large skillet over medium-high heat for 2 to 3 minutes.

2.  Add garlic, spinach and water. The pan should begin to steam immediately:

3. Cover the pan and wait for the spinach to wilt (about 2 minutes).

3. Grilled Steak

1. Season steak with salt and pepper, then grill!

All together for a summer iron-filled feast!
